Hawaiian Chicken Salad

1/3 cup thawed orange juice concentrate
2 Tablespoons sugar
2 Tablespoons salad oil
2 Tablespoons white vinegar
1 teaspoon salt
1/4 teaspoon dry mustard

3/4 cup mayonaise

2 cups cooked chicken, diced
2 cups cooked rice
1 cup diced celery
1 can (11oz.) mandarin oranges, drained
1 cup pineapple chunks, well drained

In a large bowl stir together the first six items of the dressing. Add the mayonaise. Add the chicken, rice celery and fruit. Toss until well mixed. Cover and chill. Serve on lettuce leaf.
