Thai Rice


1/2 pound bacon
3 cups cooked rice
2 bunches green onions
1/2to 3/4 cup chopped tomato
soy sauce to taste (about a table spoon or two)

Make the rice the night before or in the morning and spread on a cookie sheet to dry. (You can also fry the bacon ahead of time if you like.)

Fry bacon and remove from pan. When cool, crumble into small pieces. Leave about 2 Tbsp of bacon grease in a large frying pan. Add all ingredients and stir until hot--about 2-5 minutes.Serves 4.
